Manchego cheese is our current favorite cheese to pair with wine. I can't quite describe the taste but it is delicious, not too salty. For me, it brings out the fine taste/flavor of wine.
I'm confused whether manchego is a goat or sheep milk cheese because Barcino's and Alba's description of manchego is goat milk cheese while Wikipedia says that it is a sheep's milk cheese made in the La Mancha region of Spain.
Thin slices of manchego cheese in Barcino and Alba's (six thin slices, 350) costs an arm so I decided to buy one from Dinelli's. I haven't eaten it yet but I hope it tastes as good as Barcino and Alba's.
